To a pot of boiling water add lime juice, chopped onion and salt. Boil for several minutes. Using a sieve, strain out the onion. Put back onto the fire and add the shrimp, boiling for five minutes. Save the water and set it aside. Allow the shrimp to cool.

In a bowl combine fresh chopped onions, green peppers, tomatoes, lime juice, orange juice, olive oil. Mix together with the cooled shrimp and thin with water from the boiled shrimp.

Place in a bowl and garnish with a slice of red pepper, a slice of lime, and some parsley.
